Potato wiping is one of the traditional delicacies in northern Shaanxi.
It is to cut potatoes into slightly thick shreds, mix them with dry flour, make each shred evenly covered with a layer of clothing, and then steam them in a drawer. Mix garlic paste, hot noodles, sauce, vinegar, onion oil or sesame oil, mix tomato paste, or stir fry them in a wok quickly. The taste is better. 
It is a food of the four seasons.
